Meat hygiene

The ante-mortem and post-mortem inspection (formerly meat inspection) comprises the official statutory inspection of animals for slaughter (cattle, calves, pigs, sheep, goats, other biungulates, solipeds and wild game) before and after slaughter to determine whether the meat is suitable for human consumption.

It consists of

• Ante-mortem inspection
  Inspection of the live animal
• Post-mortem inspection
  Inspection of the carcass

This is mandatory for each individual animal in the case of commercial slaughter. For domestic slaughtering, the post-mortem inspection is usually sufficient. Every slaughter must be registered with the official veterinarian responsible for the place of slaughter at least 48 hours in advance.
Pigs, solipeds and badgers whose meat is to be used for human consumption are always inspected for Trichinella after slaughter.

The ante-mortem and post-mortem inspection is carried out by an official veterinarian from your surveillance district in the district of Ludwigsburg. This veterinarian assesses the live animal and whether the meat is fit for human consumption and may be placed on the market. The veterinarian will also arrange for the legally required tests (e.g. trichinae). If there are grounds for objection, the meat is declared unfit and labeled as such and does not enter the food chain.

The costs for ante-mortem and post-mortem inspections are charged according to the current fee regulations of the Ludwigsburg District Office.
